Choose the format that fits how guests will gather
A canapé reception encourages guests to circulate, while a buffet needs serving surfaces and an organised flow. Explain the event's length and whether it replaces a full meal. A number of small pieces cannot be compared directly with a main-course portion. Vegetarian options and dietary requirements should be allocated clearly rather than left as indistinguishable extras.
Arrange what happens after the food arrives
Provide tables, serving utensils and appropriate hot or cold holding arrangements. Establish who sets out dishes, replenishes the buffet and retrieves equipment. If the contract covers delivery only, those tasks still need an organiser. Confirm access times and appoint the person who will receive the containers before guests arrive.
