Build a buffet around identifiable dishes
A cold buffet usually offers several preparations for guests to choose from. Compare the intended guest count, dish weights and included sides. Dietary preferences need to connect with clearly labelled recipes. A buffet quotation does not automatically include setup, staff or tableware, so confirm those services individually before treating two catering proposals as equivalent offers.
Arrange storage before setting out the food
Platters need sufficient chilled storage until service, following the caterer’s directions. Ask for their dimensions and delivery schedule. For a longer event, discuss replenishment instead of putting every dish on the table at the beginning. Returning containers or hired equipment also needs to be planned, particularly when the venue closes shortly after the guests leave.
