Specify the excluded meats before choosing
When avoiding red meat, tell the supplier exactly which meats and products you exclude. Commercial categories do not always match your definition. A poultry, fish or vegetable dish may contain stock, filling or sauce that needs checking. This precision allows recipes to be compared without inferring their composition from colour, a photograph or an abbreviated menu title.
Vary preparations around your other preferences
Leaving out red meat allows many choices, including vegetarian or vegan dishes if desired. Review portion size, sides and replacement ingredients instead of treating every alternative as equivalent. A rotating range requires a fresh look at each new menu. For recurring orders, agree acceptable substitutions so that the selections originally specified remain reflected in later deliveries.
